
Garlic and Cauliflower Millet Mash for Spring (Breakfast or Lunch)
This kapha balancing dish is perfect for any meal of the day including breakfast.
Ingredients
- ½ tsp Ghee (oil of choice) Substittue oil of choice, avoid butter
- 1 Garlic Clove, Minced
- ¼ Shallot, Minced (or 1/8 Cup Onion) Optional
- ½ Cup Cup Millet Adapt with your favorite kapha balancing grain.
- ½ Cup Cauliflower, Chopped
- 1-½ Cups Water Amount depends on your grain as well as how much of the grain you use, and how creamy you want it.
- ¼ tsp Marjoram
- ¼ tsp Oregano
- Salt and Pepper to Taste
Instructions
- Sauté shallot and garlic in ghee, about 1 minute at medium heat.
- Stir in cauliflower, marjoram, oregano, salt, and pepper and cook for 1 minute.
- Reduce heat to low and add water.
- Bring to boil and reduce to slow simmer on low.
- Simmer, uncovered for 20-30min.
- When desired texture is reached transfer to bowl and serve warm.
Notes
Stir in a little extra ghee at serving to make it extra creamy.
Make breakfast more hearty by chopping up a hard boiled egg.
Suggestion: I use 1/3 cup mix of quinoa and millet. It is a good practice to rinse your grains before cooking, but isn’t required. I soak my grains overnight for extra creamy texture and easier digestion. For breakfast, I add a hard boiled egg, pepper, and more ghee. For a lunch version, I add spinach, or any bitter leafy green you like, toward the end to cook down about 10 minutes. Pumpkin seeds also offer a crunchy texture for the lunch version.
Tips: I chop a head a cauliflower and place into baggies in correct quantity to place in the freezer. One sandwich bag is a good size for two meals. Hard boil the eggs over the weekend so they are ready to go during the week. Have the pan on the stove the night before, peel the garlic clove and cut off your desired chunk of onion. Place the un-chopped shallot at garlic clove in the pan on the stove, covered, overnight. In the morning, Turn on electric kettle or boil water in a separate pan., Chop the shallot and garlic clove to sauté. Follow instructions and get ready for your day while it cooks.
